At the age of 18, I left Japan and spent 11 years
in Provence and Alsace, France, where I immersed myself in French cuisine.
Le 703 is the culmination of our efforts to express our gratitude to the people
who have nurtured us in the land that we hold such strong feelings for.
I would like to keep in touch with the charm of traditional cuisine in order to
more deeply understand the spirit of French cuisine, aiming for a dish that is more than authentic.

Professional Experience

  • 1998-2003 : Worked in Christian Etienne, a michelin-one starred restaurant in Avignon city.
  • 2004-2007 : Worked in Buerehiesel, a then-michelin-three starred restaurant in Strasbourg city, Alsace.
  • 2007-2009 : Worked as a chef in Mon Vieil Ami, a restaurant in Paris.
